Eat the Rainbow

Short on time? Need simple, healthy, quick and delicious meal ideas? Try these!

chicken lettuce wrapPressed for time – pick up produce already washed and sliced. I used romaine lettuce, sliced cherry tomatoes and a tub of guacamole with a thinly sliced chicken breast I cooked in under 8 minutes!  Combine everything into a wrap using the lettuce for the shell. Delicious!

Make it a game to see how many colors you can eat in a day!  Here’s a salad I threw together from things in the fridge…no grocery trip required when you have a variety of healthy things in the fridge. It makes eating the rainbow simple, quick, healthy and delicious. Check out the easy meal-prep section in your grocery produce area this week! You’ll be glad you did.

 

 

Lies, Doubts and Fears

How much of your day is spent believing lies, doubts or fears? What price are you paying for believing them?

In what area do you continually struggle? Common areas are health, weight, confidence and finances. What underlying lies, doubts or fears keep rearing their ugly head? Let’s use weight for example. Are you haunted by failed attempts and overwhelm? Dig a little deeper. Do you continually overhear family members saying she’s pretty but the “heavy set one” or “she’s just a little thick around the middle like Grandma.” After closer examination you might see patterns emerge. Are they labels you were given and expected to wear without your consent?

After some soul-searching, I identified labels and expectations placed on me by others. Never once did I stop to question if they were true. I accepted them as truth because they came from a trusted well-meaning loved-one years ago!

How many lies, doubts or fears are you believing about yourself? Could they be labels, engrained in your memory, familiar, always tied to your name? Dig a little deeper. I challenge you: are any of them lies, doubts or fears? If so, have the courage to change them and allow freedom its rightful place in your life…starting today.

Looking for a quick dinner idea?

Stir Fry 1Stir Fry 2How many times have you been asked, “What’s for dinner?” I’ve lost count actually! Here is a fantastic meal suggestion. Stir Fry. It can be anything you want or “need” it to be. Pressed for time? Swing by your local grocery store’s produce section for already cut veggies. The produce section has many options to fit any budget.   Have a little time and don’t mind the prep to cut up all the veggies then buy the whole head of cabbage and use half now and half later.

Looking for extra protein with your meal? Add a chicken breast or a handful of shrimp. Same rule applies here. Running short on time? Purchase already cooked chicken or a Rotisserie. Stir Fry 4

Anyway you cut it…there are ways to fit healthy meals into your routine. Get creative because the combinations are limitless! Oh, and remember to have FUN while you create. Believe me, food always tastes better when you add the VITAMIN L for LOVE!

Increase Your Memory without Meds

According to Merriam-Webster’s Dictionary, “Gratitude is a feeling of thankfulness.”

Are you in the practice of keeping a gratitude journal? For those of you who do you can attest firsthand to the increase in mood this brings! Studies have found that simple awareness and making “mental notes throughout the day “knowing you will write them down heightens your memory and brings a greater sense of calm and purpose. Who doesn’t want and need more of that, right?

Start your day by looking for a few things you can be grateful for and believe me…you will find them. It could be as simple as the laughter of a child, a beautiful sunrise or sunset, maybe traffic was lighter than expected, or what about how great your cup of coffee smells and tastes when you actually slow down to enjoy it. Whatever you “find” throughout your day you owe it to yourself to really enjoy it! Far too often, we are running from here to there, to the next meeting or conference call, trying to multi-task with several projects at one time and simple miss out on the little things that are beautiful and should be treasured. This is a simple technique and anyone can do it. The key is to have one dedicated place to record your thoughts and gratitude.

Grab a notebook. It really doesn’t matter what size, kind, color, lined or unlined. If you are more comfortable with tech then grab your phone, iPad or laptop! Just start capturing the “little” grateful moments in life that would normally go unnoticed. I challenge you to adapt this technique and let me know if you see an increase in mood as well as memory retention without meds. I have included a link to help you get started.
